Fire up the grill and let the aroma of caramelized papaya transform your backyard BBQ into a beachside feast!

Ingredients:

1 Skybury Papaya, cut in half, seeds removed

Serve with yoghurt, cherries, blackberries and granola clusters

Oil spray for cooking

Method

Slice Skybury Papaya in half and with a spoon

scoop out seeds. Scoop out some flesh and cut into

cubes and set aside.

Spray flesh with oil, to prevent sticking.

Place flesh side down on a medium to high grill

pan or BBQ and cook for 2 mins or until your liking.

Get ready to roll up your sleeves and dive into this sticky, sumptuous, and oh-so-satisfying Sticky Papaya Chicken Wings!

Ingredients

250g Skybury Papaya (pureed)

2kg chicken wings

2 tsp olive oil

1/4 cup packed brown sugar (60g)

1/2 cup fresh orange juice (125 ml)

2 tsp fresh lime juice

1 tsp fresh grated ginger

1 tsp chilli powder or smoked paprika

Garnish

Fresh coriander leaves, fresh, papaya, lemon and lime wedges

Method: 

Cut chicken wings into wingettes and drumettes, discard tips

Combine all marinade ingredients n a large bowl and mix well. Add wing sections and toss to coat.

Set wings aside for 30 mins to marinate. Preheat oven to 200ÅãC.

Line two rimmed oven trays with baking paper. Remove wings from bowl, reserving marinade, and arrange in a single

layer – skin side up – over the prepared trays.

Bake 25 – 30 minutes, basting with the remaining marinade twice during cooking.

Serve with coriander leaves, fresh Skybury Papaya, and citrus wedges.
