Ingredients:
125g Skybury Papaya (deseeded & mashed)
2 cups self-raising flour
1 cup brown sugar
1 tsp baking powder
1 cup banana (mashed)
2 eggs (lightly whisked)
150g melted butter or 100ml cooking oil
1/2 cup toasted macadamias (coarsely chopped)
125g Skybury Papaya (finely chopped and kept aside)
1 cup banana slices
Method:
Pre-heat oven to 180oC. Grease and line muffin cases / tray
Combine the flour, sugar and baking powder in a large bowl. Combine mashed Skybury Papaya, banana and eggs in a small bowl. Add to the flour mixture with the melted butter, macadamias and extra Skybury Papaya and gently stir.
Spoon into the prepared muffin cases and add garnish banana pieces on top. Place in the oven and bake for 20 Minutes or until a skewer inserted in the centre comes out clean.
Remove from oven. Set aside for 10 minutes to cool. Serve warm or room temperature
